Also when you install two new pieces of drywall together, the edges taper (or thin out a bit) so that you can use a joint compoint to hide the seam and still get a level surface. Accomplishing that same outcome takes some extra attention when installing new drywall against existing drywall. So make sure your insurance company is accounting for all the time and material it takes to create a surface that matches just like before it was damaged.
Number two: Corner repairs cost extra
Whether you have typical squared corners or bullnose, there is extra material under the surface that will be removed if the damage runs to a corner. If that corner bead has to be replaced, it means that two walls have now been affected and will require painting. So make sure your insurance company has accounted for that.
Number three: Repairs generally take more time than new installation.
You may have 64 square feet of drywall needing to be replaced in a room, but that may be split up over 4 or more sections of damage. If you were installing 64 SF of drywall to a new construction that would mean putting up two full sheets, which is much more simple prepping and installing 4 or more smaller repairs.
